A wild yeast strain with Belgian lineage, Brettanomyces Bruxellensis Trois, or Brett Brux Trois, produces delicate characteristics of mango, pineapple, orange peel, and hibiscus. The addition of cherries layers natural herbal notes from the whole cherry – stem, skin, pit and all. Faint hints of sweetness before a bone dry finish, this beer will likely confuse most of you.
NOTE: Using Brett during fermentation does not mean a beer will be tart or sour. This is a common misconception, and it is our hope that as you experience beers like Cherry Brett, you will have a chance to learn more about wild fermentation along with us.
